Colacchio Food was founded in 1970. We are located in Calabria in southern Italy, and we are a family business.
We produce baked goods and Italian bronze-cut pasta.
Our pasta is made from 100% durum wheat semolina. What makes our pasta unique is the artisanal production method and the time involved. Let me explain.
Our pasta is naturally bronze-drawn and dried very slowly. Some shapes are dried for up to 36 hours at a temperature between 38 and 45 degrees Celsius.
This allows it to retain all its nutritional qualities, hold up well during cooking, and, above all, maintain a very light color.
In fact, unlike other types of pasta, it is not yellow but much lighter in color thanks to the slow drying process.
