our grandmothers used to, and we’ve perfected how to do it on an industrial scale. Fresh pasta doesn’t get many chances with new consumers. In most markets it’s still a niche, so that first experience has to be great. That’s why we keep our focus on quality every single day.
How? High egg content. That’s the secret behind our soft, silky texture. We mix the dough slowly so it gets the strength and elasticity needed for our lamination. It’s the base of everything we do.
Filling: our hero! We cook every filling ourselves, from scratch, using simple ingredients and recipes created specifically for each customer. Nothing is frozen, nothing is stockpiled. Just real food prepared the way you’d cook it at home, small batches, every day, with care and attention.
