Olympia Provisions is a Portland, Oregon–based producer of world-class American charcuterie, founded in 2009 with a commitment to traditional European techniques, pasture-raised meats, and uncompromising craftsmanship.

Working closely with small family farms across the Pacific Northwest, we handcraft salami, sausages, pâtés, and cured meats using time-honored techniques and whole-animal practices. Our products are made without shortcuts—no fillers, no artificial ingredients—resulting in clean flavors, exceptional texture, and true sense of place.
