Tsar Nicoulai, located in California’s Sacramento Valley, is America’s only ECO-CERT™ certified sturgeon farm, recognized for its sustainable and environmentally responsible aquaculture. Founded in 1984 and stewarded by the Bolourchi family since 2014, the farm prioritizes sturgeon welfare and minimal ecological impact. Fish are raised without antibiotics, growth hormones, pesticides, or synthetic chemicals and are fed a natural, species-specific diet. After 6–10 years of careful maturation, caviar is harvested and processed on-site using traditional methods and minimal salt to preserve purity and flavor.
